Buckeyes! My favorite holiday dessert

By

I grew up with my grandma - who is originally from Ohio [Ohio State Buckeyes!], so as a teen, I learned how to make this yummy dessert and I try to make it every year. :)

Buckeyes

1 1/2 cups smooth peanut butter [or chunky is fine, too]

24 oz confectioner's sugar [1 1/2 boxes]

1 cup margarine/butter

1 1/2 tsp vanilla extract

12 ounces of semi-sweet chocolate chips

toothpicks

wax paper

Directions

Mix the peanut butter, sugar, butter, & vanilla. Last year was the first time I've ever used a stand-up electric mixer and I absolutely recommend this! It's so much easier. If you have a regular hand mixer, that's great, too.

Roll the 'dough' into small balls. Whatever size you feel you like - the smaller the better, because they're easier to dip into the chocolate and easier to eat in one bite. :)

Melt the chocolate over low heat - continue to stir. Remove the chocolate from the heat as soon as it loses it's shape and becomes glossy. Take toothpicks and poke them into your peanut butter balls, dip them into the chocolate all the way until there is a small circle of peanut butter showing at the top of the toothpick, then lay them onto wax paper.

Once you are done dipping them, chill them in the refrigerator for 1-2 hours and then serve! :)

They do freeze very well, also!

Great recipes there, as a South African it is interesting to get these recipes from other countries. I will certainly try them as I love peanut butter, and it is better than eating it by the spoonful.

These look great. My wife loves reese cups but thinks their is too much chocolate. It looks like this might be a better ratio for her.

Love the sound of these, and the end result makes them look like "Conkers". :)

that's a good question! i'm sure they would, especially around xmas time, because it's cooler out and they won't melt. :)

My Grandmother made these way back when and I am so glad to get a recipe for them again. Very glad. Thanks.
